She even did mine Keto. The good thing is I live alone and don't have to share with anyone. The bad thing is I live alone and have no one to share it with. 7 3

I have several good friends who journeyed separately and are now gathered camping in Texas at a private ranch for the eclipse. They sent a little video showing how they are all set for the wonder and awe of tomorrow morning. John and I would be right there with them, even though that kind of trip would have meant a week of recovery once we returned home because of our later-in-life health issues. I will be sharing our 40% partial eclipse with the same small group of friends as last October. We had 80% coverage for that one and it was glorious on a perfect, warm, crystal clear day. We will have a light lunch afterwards and enjoy being together. But I will miss John being with me so much. OTOH, I could say that about a dozen things every day.💔 1 6

I saw another solar eclipse once so will content myself with having had that. 2 1

It’s very generous looking and so beautiful too. And I am serious about preferring sliced cucumbers to crackers. For me, not because it’s keto friendly, though that’s a nice bonus, but because I just love that juicy, sweet-ish crunch with meats and cheeses. Because my doctor has me on a modified carbohydrate way of eating, I have to choose (whole grain pasta or bread, potatoes or dinner rolls, for example), something like cucumber slices leaves me free to “spend” my carbohydrate budget elsewhere. Win-win. Ditto with the mixed grape tomatoes instead of grapes. I do like grapes, but again would have to forego some other fruit. I bet Kodie is enjoying his little bits too. 1 1 2

I have no picture to see for some reason but I can imagine how beautiful this tray must be. Being a vegetarian I would love to find one of these with out the meats but stuff that I could have......but then there is the its just me. Learning to cook for one is not an easy task by far. Made me laugh..... the good thing is I live alone and don't have anyone to share with and the bad thing is the same.....got a chuckle out of this thanks for sharing. 1

Moderators KayC Posted June 22 Author Moderators Report Posted June 22 She tried to sell me an 8x8 for $25, previous $20 full price, $10 sale price (she'd put one on sale if no one bought it)...she tried on me last night and I messaged her I'd just come from Subway (where with their FLBOGO and rewards I paid $6.59 for four 6" subs)...and I got the bread cubed for my dog to put in the freezer! No, $25 is too rich for my blood. I saw that she complained on FB about it not selling. Okay, eat it then. 3

Mention of the Instant Pot brings me sad thoughts and memories. I have the large one including the Air fryer cover and insert. I am too this day impressed with quality and appearance of the heavy thick bottom inner pot. Before my taste problems I would cook beef roasts with potatoes mini carrots and onions for Vickie and I. However for a year or so before she passed I would only cook for her. She preferred to just have the potatoes and carrots over sliced onions cooked with a box of beef broth, salt and pepper and a good helping of "Slap Ya Mama" seasoning. Since she passed that pot has sat on the counter silently speaking to me every day. I haven't used it since not intend to and yet I don't have the heart to remove it. There's actually many things especially around the kitchen I'll never use but refuse to touch because of that "these are Vickie's" feeling. 3

The fact that you didn't have to cut or prepare all that yourself is a win win in itself. My daughter has moved out and I am finding myself having to cook and buy food for one. I am not good at this! I suck. How do you all do it? I love Costco but now being just me that is a bit much as well. Cooking has never been my thing. I used to love to bake, cakes, decorate them as well, cookies, scones all the things. Having a husband that was cook by trade and could do it very well in no time. Come running from one room to another to show me how to do something in the kitchen better "his way" and then end up just taking it over. Cooking never thrilled me. Still doesn't. At least I can eat what I make now...... quirky me with the food aversion. After buying it, smelling it, touching it, cooking it spicing it.....meh. Too much. I wouldn't want to eat what I made right away. I have gotten over that little quirk. Gosh you would think I am skinny.... nope. a pudgy little vegetarian I am. LOL Seriously give me some good tips on cooking for one. Don't tell me to freeze left overs. I know that. I have a freezer full. LOL I find it hard to shop for one. Cook for one. I will eat to my full have some left throw it in the fridge thinking there is another meal for another night this week and then forget it or not want to eat it. How do you all do meals for one now? I seriously need help with this. Do you find it cheaper to just grab something out? By the time I get done buying all the ingredients to make something it would have been cheaper to eat out for me or am I just not planning or going about this right? would love tips and helps on this dilemma. What do you all do? 2 1

Frozen veggies, freeze herbs and spices like puree garlic, chopped dill, etc. Aside from the lentils, I don't really meal prep. I store perishable ingredients in the freezer and fridge and cook with them every day, taking out just enough to make one serving. Then there are foods that don't require cooking like fresh fruit, sandwiches, dried fruit, nuts, etc. Most bread freezes well too. I'd take a couple of slices out and pop them in the toaster or put them in a well sealed bag and defrost it on the counter. You can always meal prep: 1
